Health 101

Welcome to Health Wise 101. I accepted the challenge to write and teach a course about exploring the effects of carbohydrates (sugar) on the human body. My challenge was to build a course where I used myself and my own experiences as the model for understanding. I have a feeling the greater understanding was or will be learned by myself. It was a philosopical journey. A journey of understanding that a person can only gain from, by walking the path themselves.
Health Wise 101 is a six-week course. Now it is my turn to challenge you to do the same things I have done. You are challenged to explore the effects of carbohydrates and (sugar) on your own body. I want to say "live to write about it", which is what you will be doing. Just as I have done.

At the end of this course you should be able to understand what carbohydrates are, and what role they play in balancing nutrition. You should also be capable of reading common food labels and understanding the percentages associated with them. You should be able to describe how to calculate your own glycemic Index. You will accomplish the necessary skills to adequately craft your own basic food guide pyramid and the dietary supplement pyramid. You will have explored and demonstrated the basics of belief vs. science when confronted with health claims. By course-end you will establish your own nutritional base line, as well as learned how to incorporate exercise, and how to correct poor nutritional habits.

Discovery Quizzes and Participation Points
There are five discovery quizzes, These quizzes will count toward your participation points. The quizzes are there to pre-test your basic knowledge. The tests are not timed and you can take them as many times as you need too during the week they are due. At the end of the week they will be locked.
Assignments
There will be three assignments, the first assignment is heavy with content. Week one, you will develop the template for your health learning log and a blog. Your answers will be peer reviewed using a rubric.
Discussions
Students are expected to participate in weekly discussions. Students are expected to actively engage in the online discussions. You must post a comment, and then post to at least one of your classmates posts as well.
Projects/Assignment/Final Paper
- Weekly Chart: You will need to develop a chart that you can document your progress on and/or a blog detailing your progress throughout the semester. So I would suggest you begin now thinking about how you will document your progress. Final project will cultivate with a final the last week of class.
- Weekly Blog: This blog will be a self reflective blog documenting your understanding and feelings if you will regarding the course material.
- Final paper: The weekly chart and blog should be incorporated into a 5 to 6 page final paper due the last week of the course. Students will report on their own personal learning discovery as it pertains to carbohydrates (sugar). The paper needs to be at least 5 pages long, double spaced using APA format. Please include a separate page for your resources.
Extra Credit
Students may write a two page OFF TOPIC paper or develop a 5 minute video related to teen dieting and the clothing industry (worth up to 5 points)
There are 100 points possible in this course.
There are two major projects both worth 15 points apiece, for a total of 30 points. The weekly chart & blog, and a final paper.
There are five discussions worth 5 points each, for a total of 25 points.
There are three peer reviewed assignments. Worth 5 points following the rubric that will be provided. Total of 15 points
Quizzes : There are six quizzes each worth 5 points for a total of 30 points.
No late work will be accepted.

Needs Analysis: There is a need to help learners understand health nutrition, especially as it relates to the topics of sugar, carbohydrates, diabetes, and the Glycemic Index. There is also a need to help students understand or find guides to one of the country’s leading health issues, diabetes.
Problem Statement: The problem that most students lack is the basic knowledge regarding the harmful effects of sugar and various food products that could affect ones blood sugar level; especially as it relates to diabetes. Students don’t know where to begin in their search to learn about health issues.
Target population:
The target population could be anyone who has internet access and can search for the key words “sugar, carbohydrates, diabetes, Glycemic Index”. It is an interest driven topic, however it could function as a diet site for those looking to monitor their weight.
Individual concepts, tasks, etc:
- At the end of this course, students should understand what carbohydrates are, and what role they play in balancing nutrition.
- They should be capable of reading common food labels and understand the percentages associated with them.

- They will show that they can adequately craft their own basic food guide pyramid and the dietary supplement pyramid.

- By course end student should have established their own nutritional base line, as well as learned how to incorporate exercise, and how to correct poor nutritional habits.
How it will be instructed
Some built in guidelines will help the learner navigate the creative learning process. It is structured for minimal collaboration. The use of supplementary websites and YouTube videos as scaffolding tools will make tasks easier, reduce the learner’s cognitive load, and help to point out complexity. Students will be required to participate in a number of weekly quizzes, discussions, and learning tasks.
Design principles, theories, or ideas being used to instruct:
Students will engage in discovery learning which will utilizes the techniques of a variety of instructional methods, including problem based learning and Inquiry Learning. It is presumed that the learner already has a knowledge base from which to pull from, and they use that base in more of an experimental capacity to explore and manipulate the new data they will practice with.
The instructional design will consist of a Canvas site and books
The instruction method will be fully web based. Students will have access to a Canvas website where all instructional material for the course will be housed. This includes the syllabus, quizzes, assignments, discussions, and announcements as needed.
